SEASONED POTATO WEDGES
Processing
Cut the potatoes into wedges approximately ¾ inch to 1 inch thick.
Put the potato wedges into the Hela Spicer.
Add all of the spices and mix for 3 minutes.
Add the Seasoned Oil Brilliant Red and mix for 2 minutes.
Spread the seasoned potato wedges onto baking trays and bake in the Rational
ClimaPlus
Combi Oven.
Suggested program:
Dry heat at 320°F for 5 minutes.
Combination heat 320°F, 90 % humidity for 15 minutes.
Dry heat at 320°F for 3 minutes.
Dry heat at 400°F for 4 minutes.
