RECIPE – SERVICE HeLa SPICER

MARINATED HONEY DIJON PORK CHOPS

MATERIAL INGREDIENTS
  Marinade per 1 kg of tumbled meat: Art no

1.5 kg   Brine 01-V-001
11.5 kg Total

45 g Dijon Mustard Marinade
15 g Seasoned Oil Brilliant Red

PROCESSING
 
Pump the pork loins 15 %.
Cut the pumped pork loins into chops approx. ¾ inch to 1 inch thick.
Vacuum tumble the chops in the Hela Spicer for 4 minutes.
Add the Dijon Mustard Marinade and tumble for 2 minutes.
Add the Seasoned Oil Brilliant Red and tumble for 1 minutes.
Remove the marinated meat from the Spicer Tumbler and pack as desired.

SEASONED WHOLE CHICKEN

 

MATERIAL

INGREDIENTS

  Spices & Ingredients per 1 kg of chicken:  

Fresh Whole Chicken 2 ¼ to 2 ½ lbs. each

8 g Hela Roestal Seasoning
4 g Salt, fine
1 g Onion, granulated

PROCESSING  

Put the fresh whole chicken into the Hela Spicer.
Add the spices & ingredients and mix for 2-3 minutes.
Remove the seasoned chicken from the Spicer, tray pack and overwrap.

B.B.Q. CHICKEN DRUM STICKS

MATERIAL

 INGREDIENTS

  Spices & Ingredients per 1 kg of meat:  

10.0 kg Chicken Drum Sticks

20 g Hela Roestal Seasoning
2 g Red Bell Pepper, fine
1 g Green Bell Pepper, fine
2 g Onion, cut 1-2 mm
3 g Garlic, minced
15 g Seasoned Oil Brilliant Red

PROCESSING
Put the fresh chicken drum sticks into the Hela Spicer.
Add the spices & ingredients and mix for 4-5 minutes.
Add the Hela Seasoned Oil Brilliant Red and mix for 1-2 minutes.
Remove the seasoned chicken drum sticks from the Spicer, tray pack and overwrap.

CHICKEN WINGS – HONEY GARLIC

 

MATERIAL

 

INGREDIENTS

  Spices & Ingredients per 1 kg of material:  

126.0 kg Chicken Wings, pre-tumbled

45 g Honey Garlic Seasoning Marinade 050500
PROCESSING
Add the Honey Garlic Seasoning Marinade to the pre-tumbled chicken wings into the tumbler.
Vacuum tumble in HeLa SPICER for 5 minutes on slow speed.
IQF freeze the chicken wings immediately after tumbling.

SEASONED CURLY FRIES

MATERIAL

INGREDIENTS

  Spices & Ingredients per 1 kg of Potato:  

Fresh Potatoes, peeled or un-peeled

12 g Roestal Seasoning
30 g Seasoned Oil Brilliant Red

PROCESSING
Cut the potatoes into Curly Fries, using the Curly Fry Cutter.
Put the Curly Fries into the Hela Spicer.
Add the Roestal Seasoning and mix for 3 minutes.
Add the Seasoned Oil Brilliant Red and mix for 2 minutes.
Spread the seasoned potato wedges onto a frying basket and bake in the Rational ClimaPlus
Combi Oven.
Suggested program:
Dry heat at 350°F for 3 minutes.
Combination heat 325°F, 100 % humidity for 8 minutes.
Dry heat at 400°F for 4 minutes.

LEMON PEPPER CHICKEN BREAST

MATERIAL

  Spices & Ingredients per 1 kg of meat:  

9.2 kg Chicken Breast, skinless
0.8 kg Water, cold
10.0 kg Total

55 g Lemon Pepper Marinade
10 g Seasoned Oil Brilliant Red

PROCESSING
Put the fresh chicken breast into the Hela Spicer.
Add the Lemon Pepper Marinade and the cold water mix for 15 minutes under vacuum.
Add the Hela Seasoned Oil Brilliant Red and mix for 1-2 minutes.
Remove the seasoned chicken breast from the Spicer, tray pack and overwrap.

SEASONED POTATO WEDGES

MATERIAL

INGREDIENTS

  Spices & Ingredients per 1 kg of Potato:  

Fresh Potatoes

12 g Golden Blend Vegetable Spice
3 g Garlic, granulated
2 g Oregano, rubbed
15 g Seasoned Oil Brilliant Red

PROCESSING
Cut the potatoes into wedges approximately ¾ inch to 1 inch thick.
Put the potato wedges into the Hela Spicer.
Add all of the spices and mix for 3 minutes.
Add the Seasoned Oil Brilliant Red and mix for 2 minutes.
Spread the seasoned potato wedges onto baking trays and bake in the Rational ClimaPlus
Combi Oven.
Suggested program:
Dry heat at 320°F for 5 minutes.
Combination heat 320°F, 90 % humidity for 15 minutes.
Dry heat at 320°F for 3 minutes.
Dry heat at 400°F for 4 minutes.
